World of milk

I’m just back from Japan, where I chaired sessions for the Global Dairy Platform and the World Dairy Summit.

I learned how much the tide of scientific opinion is increasingly turning in favour of natural dairy for good nutrition as well as environmental efficiency.

I was also told three figures hold the key to understanding global dairying:

• 122 million is the number of dairy farmers

• 3 cows is the average herd size

• 2,100 litres is the average annual yield of milk per cow.
